It’s Monday, I know. It’s always very hard for me to get excited about things on a Monday morning but I promise you that this post will brighten your morning. I have a friend that owns a chocolate shop in Milwaukee and she invited me in this past weekend for a little behind-the-scenes look at how she makes chocolate. AND she let me help make some caramel pecan clusters. Just call me Willy Wonka because I’m pretty awesome at making chocolates!

ChocoBella is located in Milwaukee, WI and they are about to celebrate their first year in business! They make beautiful chocolate art and treats that taste amazing.  I had the opportunity to help out making Tortues this weekend, which are basically pecan turtles. You aren’t technically allowed to called them turtles since that term is trademarked.

Caramel

I started out by measuring out 15 grams of caramel and laying each piece out onto a parchment lined baking sheet. After the caramel was cut, it was flattened and filled with pecans, then rolled into a small rectangle. Once all of the caramel was rolled it was time to dip in the chocolate!

But first, making sure that the chocolate was at the proper temperature. Testing is done with a small parchment piece which you run across the top of the chocolate. It should take about 1 minute for the chocolate to cool for you to know that it is at the proper temperature.

Using a small fork, I dipped each piece of caramel into the ‘sweet spot’ of the chocolate warmer. That’s where the chocolate is at the best temperature. The chocolate then gets placed back on the baking sheet to be sprinkled with sea salt, dotted with a pecan and allowed to cool. 70 Tortues later, I had finished my task!

I learned that chocolate making is truly an artform.  Flavors and designs all include a creative aspect to achieve the best flavor combination and the most appealing to the eye candy.  ChocoBella offers a variety of unique flavors such as Strawberry Balsamic and chocolates spiced with chipotle peppers.
