- 1 15-ounce can cannellini, drained
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2-3 whole sun-dried tomatoes packed in oil
- Oil from jar of sun-dried tomatoes
I’m a big time snacker and I’m always looking for new snacks. Hummus is typically my go-to snack, paired with red peppers or snap peas. I was looking for new flavors and then I put this little snack together. And guess what…it includes sun-dried tomatoes! Oh, and it’s super easy. In this recipe I am using the Bella Sun Luci sun-dried tomato halves in oil with Italian Herbs.
Puree the beans, olive oil, balsamic and sun-dried tomatoes in a food processor. Season with salt and pepper and then transfer to a bowl. Drizzle additional oil from the jar of sun-dried tomatoes over the bean dip and then serve with pitas and vegetables. Very low in fat and calories!












I love the idea of putting balsamic in hummus. I just bought some gourmet stuff from our local olive oil store that would be perfect for this.
You should definitely try this bean dip. It’s light and delicious!
