• 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tblsp vanilla extract
  • 4 ripe bananas, peeled and coarsely mashed
  • 3 oz cream cheese, room temp
  • 6 tblsp unsalted butter, room temp
  • 1/3 cup mascarpone cheese, room temp
  • 3 tblsp honey
  • 1/2 cup chopped walnuts

It’s Friday and I have treats for you. I’ve also got another giveaway. But before we get to that I wanted to quickly talk about my love for cheese. Many of you know that I come from the land of dairy: Wisconsin. I’m always interested in trying new cheeses, especially if they are served with a nice glass of wine. I’m heading on an exciting Wisconsin dairy farm tour later this summer and I’ll be talking more about that later.

Crave Brothers is a dairy farm located here in Waterloo, Wisconsin. Their cheeses are produced in a very green way, using 100% green power. They make a variety of cheese from mozzarella to mascarpone and my favorite is their Petit Frer with Truffles. Anything with truffles instantly becomes my favorite.  But today I’m using their mascarpone with my banana muffins. If you haven’t tried mascarpone you are in for a real treat.  It’s smooth and velvety, sort of like a more buttery version of cream cheese. You’re going to fall in love.

Preheat the oven to 325°. Line 18 muffin cups with paper liners and then set to the side.

In a medium bowl whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a separate bowl beat the sugar, oil, eggs and vanilla to blend. Stir in the banana and then add the dry ingredients to the egg mixture. Do not overbeat the mixture.

Divide the batter amongst the prepared baking cups. Bake the muffins until the tops are golden brown and a tester inserted in the muffins comes out clean. Bake for 20-25 minutes. Transfer the muffins onto a cooling rack while you prepare the frosting.

In the bowl of your stand mixture beat the cream cheese and butter until they are combined. Beat in the mascarpone cheese and then the honey. Pipe the frosting onto the cooled muffins and sprinkle with walnuts. Try not to eat just one!
