- 8 Pretzilla Mini Buns
- 4 uncooked brats
- Spicy Mustard
- 2 lbs red salad potatoes
- 1 cup precooked bacon, crumbled
- 3/4 cup finely chopped onion
- 1/3 cup white vinegar
- 1/4 cup sugar
- 1 tblsp Dijon mustard
- 1 tsp salt
Show of hands, how many of you are the ‘bread winner’ in your household? Alright, hands down. I think that a better question is how many of you would like to be the bread winner in your household? I’m not talking about money here, I’m talking about actually winning bread. Aside from just eating their rolls plain I really enjoy eating them with brats and German potato salad. Pretzilla makes these cute little pretzel mini buns so I thought I would put a spin on the typical brat and make sliders. Sauerkraut. Spicy mustard. Delicious.
Let’s start with the brat sliders. Start by removing the casings from the brats and dividing the meat into 8 balls. Form the patties to be about 3 inches each and putting a small divot into the center to keep the patties from shrinking while you grill them. Place the patties on a preheated grill and cook until they are no longer pink in the center. Remove the brats from the grill and assemble by stacking the brat patties on each on the mini buns and topping them with a spoon of sauerkraut and spicy mustard.
And now onto the potato salad. I used small, red salad potatoes and placed them into a large pot of cool water just covering the tops of the potatoes. Be sure to salt the water! Bring the water to a boil and continue to boil over medium heat until they are fully cooked in the centers. Drain the potatoes and allow them to cool before removing the skins carefully and slicing them up.
Heat the olive oil over medium heat in a large saucepan. Add in the onion and saute until they are translucent, 3-5 minutes. Whisk in the sugar, vinegar, mustard and salt and stir until thick and bubbly. Add in the potatoes and gently toss to coat. Mix in the bacon and serve alongside of the brat sliders. You’ll definitely want seconds!
