Is it just me or does anyone else out there find rotisserie chicken to be one of the most amazing foods of all time? I love how versatile they can be when preparing different meals. You can easily pick them up at your local grocery store and create a delicious meal of chicken tacos, chicken noodle soup and my new favorite, Buffalo Chicken Taquitos!
With the ‘big game’ coming up this weekend I felt like it was time to create another buffalo chicken creation that didn’t involve bones. I’ve started to come around to real chicken wings but my favorite buffalo chicken feasts come from the ever versatile rotisserie chicken. I decided this time around to roll them up in soft flour tortillas with a bit of shredded Monterey Jack cheese and bake them in the oven. Less calories. More flavor. These are my kind of wings!
If you’re a member of Costco I recommend their rotisserie chickens. They are plump and juicy and the best part is that they are only $5! I like the shred the chicken while it is still warm because it’ll shred easier and with these taquitos i prefer the chicken stringy versus chunky. It makes the tortillas easier to roll.
You can prepare these taquitos ahead of the big game and pop them in the oven when you’re ready to eat. i like to serve them with a sprinkle of blue cheese and blue cheese dressing or ranch dressing for dipping. It’s up to you!
- 3 cups shredded rotisserie chicken
- ¾ cup buffalo sauce
- 3 tablespoons butter, melted
- 1 cup Monterey Jack cheese
- 8 6″ flour tortillas
- Blue cheese and ranch dressing for serving
- Preheat the oven to 375 degrees F.
- In a medium bowl combine the buffalo sauce and butter and stir until well mixed. Add in the chicken and toss to coat evenly.
- Steam or microwave the tortillas so that they are more pliable. Lay out 1 tortilla at a time and divide the cheese and chicken mixture evenly between the 8 tortillas. Roll tightly and place seam-side down on a baking sheet.
- Bake for 8-10 minutes, until golden brown. Serve topped with a sprinkle of blue cheese and blue cheese or ranch dressing for dipping.
