I sure hope you had your fill of turkey and desserts yesterday. I know that I sure did! Despite all of the running around I sure had a great time with my family.  It’s always nice to gather together and enjoy the company of your family and friends with a delicious meal.

So while your stomach is still settling this morning I thought that I would bring you a breakfast treat to enjoy over coffee today.  I’m teaming up with Stonyfield for a nice little giveaway to end your week. Chai Spiced Coffee Cake & Giveaway

  • Streusel
  • 1 cup unsalted butter, at room temperature
  • 2 cups flour
  • ¾ cup packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground allspice
  • ¼ teaspoon salt
  • Cake
  • Vegetable cooking oil or spray (for pan)
  • 2 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • ½ teaspoon salt
  • ¾ cup unsalted butter, at room temperature
  • 1 cup packed dark brown sugar
  • 3 eggs
  • 1 ¼ cups full fat plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon freshly brewed coffee
  • Icing
  • about 2 tablespoons coffee
  • 1 cup confectioners’ sugar
  1. Prepare the streusel by combining the flour, dark brown sugar, cinnamon, ginger, cardamom, allspice and salt in a medium bowl. Using a pastry cutter or two knives, cut the butter into the flour mixture until it turns into small crumbles.
  2. Preheat the oven to 350 degrees F. Spray a 10″ bundt cake pan with cooking spray and set aside.
  3. In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, allspice and salt.
  4. In the bowl of your stand mixture, whip the butter at medium speed until it is pale yellow. Slowly add in the sugar and continue to whip until light and fluffy.
  5. Reduce the speed to low and add in the eggs 1 at a time, mixing well between each egg. Continue to mix at low speed while you add in the flour mixture and yogurt, alternating between the two. Finish by adding in the vanilla and mixing to combine.
  6. Spoon half of the batter into the prepared pan and top with half of the streusel topping. Add in the remaining batter and top with the remaining streusel.
  7. Bake the cake for 60 minutes, or until a pick inserted into the center of the cake comes out clean. Cool completely before removing from the pan.
  8. When the cake is cooled, combine the coffee and powdered sugar and mix until the glaze forms. Drizzle the glaze over the top of the cake and serve.
