- 2 tblsp butter
- 1 1/2 cups long-grain rice
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 (14 1/2-ounce) can diced tomatoes with green chiles
- 1 tsp salt
- 1/2 cup Texas Tamale Chili Con Queso
- 2 tblsp fresh chopped cilantro
I do apologize for my absence last week but I spent all weekend developing some delicious recipes to present you with this week. Today’s post includes a quick and easy dinner for your family and a spicy little giveaway. I discovered Texas Tamale Company on a recent trip to my local grocery store. What really caught my eye were the small canvas bags that held the tamales. It was just really beautiful packaging! I had to try them and I needed something equally as delicious for a side. So I came up with a quick and easy Cheesy Mexican Rice with a little bit of spice. Cook the rice according to the package instructions. In a medium skillet melt the butter and then add in the onion and garlic. Saute until the onions are translucent and then add in the can of tomatoes.
Simmer over medium heat and then add in the queso, salt and rice. Stir until well combined and warmed, sprinkle with cilantro and serve with your tamales. If you want to turn up the heat on your tamales serve them up with the Jalapeno Pepper Sauce. Yum!
