- 2 tblsp olive oil
- 2 large cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1 (28-ounce) can crushed tomatoes
- 1 package al fresco Tomato & Basil meatballs
- 4 crusty sub rolls
- 1/2 cup shredded mozzarella
I’m going to guess that most of my readers are constantly on the run much like myself. I was just thinking about how much I enjoy my weekends and having the time to make really culinary dishes and then the workweek rolls around and there’s barely time to spread peanut butter on a slice of bread. Between work and the gym and everything else that needs to get done around my house there’s not much time left to cook something delicious for dinner. I’m always looking for things to make my life easier.
These chicken parmesan meatball subs sure fit the description of quick and easy. I once again used an al fresco product: Tomato & Basil Meatballs. They are fully cooked and make for a quick dinner. (Seriously, I wasn’t paid to say that.) Anyway, this is a perfect 30 minute meal.
Preheat your broiler to high. While your broiler preheats, warm the olive oil in a large, deep skillet. Add in the garlic and saute for 2-3 minutes. Now add in the tomatoes and red pepper flakes and simmer for 10 minutes. Add in the meatballs and basil and continue to warm over medium heat.
While the meatballs warm, lay out 4 sub rolls on a baking sheet. Divide the mozzarella evenly between the 4 rolls and place in the broiler until the cheese is melted and the rolls begin to brown. Remove from the broiler.
Divide the meatballs evenly amongst the 4 sub rolls (4 meatballs per sub) along with some sauce and sprinkle with additional cheese and oregano. And there you have it. 30 minutes and done. Dinner is served!
