I love the combination of chickpeas and hearty vegetables like carrots and sprouts to make me feel nourished. This chickpea salad is best served after allowing the ingredients to sit for at least one day. You can also swap out some of the vegetables for things that you enjoy on a sandwich. If you’re not an arugula fan, swap it for spinach! If you love tomatoes, pile them high!
