I’ve been on a real salad kick lately and since I’m not a real big fan of cold chicken, I had to come up with an alternative. Enter: Chickpeas. Roasted chickpeas to be exact. Have you ever roasted chickpeas? They are seriously the most amazing thing around. They are perfect as a simple snack (beware, because you won’t be able to stop eating them) or great on top of salads. And packed with protein!

My friends over at Litehouse Foods just launched an extension of their delicious OPA yogurt dressings. One of the new flavors is Tzatziki Ranch and it is by far my favorite in the group. Seriously though, you put tzatziki sauce and pita bread in front of me and I’ll push aside the bread and eat the sauce only. #guiltypleasure
