- 1/2 tsp canola oil
- 1/2 cup chopped onion
- 1 cup Jasmine rice
- 1 1/2 cup fat-free chicken broth
- 2 tblsp fresh lime juice, divided
- 1/4 cup coarsely chopped fresh cilantro
One of my favorite parts of the burrito bowls that you get at Mexican restaurants is the rice. I’ve never been able to master the proper lime/cilantro proportions but I think that this recipe accomplishes the perfect flavor combination. This rice makes for a delicious side dish or is great for an at-home burrito bowl. The best part is that there are only 55 calories in a 1/2 cup serving. I also chose to replace white rice with a whole grain Jasmine for an extra nutritional benefit.
Heat a medium saucepan over medium heat. Add in the oil and then swirl to coat and heat. Add in the onion and saute for about 5 minutes. Stir in rice, chicken broth and 1 tablespoon of lime juice.
Bring the rice mixture to a boil, reduce heat, cover and simmer for 15 minutes or until the rice is tender and the liquid is absorbed. Remove the rice from the heat and add in the remaining 1 tablespoon of lime juice and cilantro. Fluff the rice with a fork and serve.
