Here’s something that I love and cannot get enough of: quick breads. With a simple base for quick bread the sky is the limit to add whatever you want. Cranberries. Orange peel. Nuts. You name it. And chances are that unless you’re combining chocolate and potatoes in your quick bread it’s going to turn out delicious. For today’s example I’m combining coconut and lime. Two delicious summer flavors. And did I mention that this recipe uses browned butter? If you’re not familiar with this butter method then you’re about to learn a really amazing new thing.

Browning butter is simple. Melt Butter. Simmer. Brown bits form in the bottom of the pan. That’s it. The butter turns up a rich, nutty flavor with a delicious aroma. I like to use browned butter in muffins and quick breads to add an extra element of richness to the treat.

Preheat your oven to 350°.  Coat a bread pan with non-stick cooking spray or use butter and flour.  You will need a rather large loaf pan for this bread, I used my 9x5x3 bread pan. If you don’t have a larger bread pan you can divide the batter into 2 loaves or use any excess for muffins.

In a small bowl whisk together the eggs, milk, vanilla, lime juice and zest. In a separate bowl stir together the flour, salt, baking powder and cinnamon. Add in the sugar and coconut and stir well to combine. Create a well in the center of the flour mixture and pour in the egg mixture. Stir until the ingredients are just combine and be sure not to over mix. Add in the browned butter and stir the mixture until it is just combined.

Pour the mixture into the prepared bread pan and sprinkle with sugar and additional coconut. Bake for 60-75 minutes, until a toothpick inserted into the center comes out clean. Remove the bread from the oven and allow it to cool slightly before removing it from the pan. Slice and serve with butter and a sprinkle of lime zest.
