- 1/4 cup white wine vinegar
- 1 tablespoon minced shallot
- 2 teaspoons Dijon mustard
- 3/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup vegetable oil
- 1/4 cup walnut oil
- 2 pounds asparagus, trimmed and steamed until just tender
- 1/3 cup toasted, chopped walnuts
- 1 tablespoon chopped fresh parsley leaves
- Salt and freshly ground black pepper
Can you believe that it’s here?! Day #12 is filled with 12 drummers drumming. Ok, there are really no drummers drumming unless you want to insert your own drum roll at the end of this post before you see what today’s giveaway is. It’s worth over $150! Today I’m introducing you to International Collection oils. International Collection offers seed and nut oils, dipping and flavored oils, as well as a selection of special oils. I received a sampling of their oils and was so overwhelmed by the flavors that it was hard to choose just one to cook with. The walnut oil jumped out at me and so I ran with it.
Whisk together the vinegar, shallot, mustard, salt & pepper in a bowl. Continue to whisk the dressing and slowly drizzle in the vegetable oil. Now whisk in the walnut oil.
Plate the asparagus and drizzle the dressing over the top. Garnish with parsley and the walnuts and season with additional salt & pepper if needed. Serve immediately and joy!
