- 1 can Campbell's Sun Ripened Yellow Tomato soup
- 1 sheet Puff Pastry
- 2 tablespoons fresh basil
- 1/4 cup shredded cheddar cheese
- 1 tablespoon melted butter
Here we go with day #2 of my 12 days of Christmas giveaways! I’m a big fan of tomato soup with grilled cheese, especially in the fall/winter. I was recently sent samples of the new Campbell’s Soup Sun Ripened Yellow Tomato soup and had the perfect idea. Why not make individual soufflés with the soup in ramekins as a quick, easy meal? This is a quick post but be sure to read through for your chance to win a fun Campbell’s soup kit!
In a medium saucepan, prepare the soup and warm to a medium temperature. Using the top of the ramekin as your guide, cut the Puff Pastry slightly larger than the diameter of the ramekin with a pizza cutter. You can easily get 3 circles out of 1 sheet.
Divide the soup among 4 ramekins and divide the basil and cheese evenly between the cups. Top each ramekin with the Puff Pastry and pinch around the sides to secure. Be sure the Puff Pastry does not dip down into the soup, as it won’t rise properly. Brush the melted butter over the top of the pastry and bake for 20 minutes, or until golden brown. Serve and enjoy!
