- 1 Package Sprinkles Cupcakes mix
- 1 cup heavy whipping cream, chilled
- 3 tablespoons sugar
- 2 tablespoons ice cold brewed espresso, or any other strong coffee
- 2 teaspoons unsweetened cocoa powder
Here we are on day 3 of my 12 Days of Christmas feature! Have you been enjoying my treats so far? Today I’m bringing you a sweet and festive treat sponsored by Sprinkles Cupcakes! You may know this name from their cupcake shops located all over the United States. I had the privilege of trying their cupcake mix in the Chocolate Peppermint flavor and I had the perfect idea of pairing it with my favorite holiday drink: Peppermint Mochas! Prepare the cupcakes according to package instructions. The directions indicate that the package makes 12 full-sized cupcakes, however, I decided to make a dainty treat with mini cupcakes. Allow the cupcakes to cool fully before frosting them.
To mimic the coffee drink, I chose to go with a whipped cream frosting flavored with a hint of coffee. In a chilled mixing bowl, whip the cream and coffee for 1-2 minutes on medium speed until it begins to thicken. Slowly add in a combination of the sugar and cocoa powder as it continues to mix. You don’t want to over whip the cream as it will turn into butter. Continue to whip the cream until soft peaks form. I used a pastry bag to pipe the whipped cream unto my cupcakes and then sprinkled them with the candy pieces that came with the mix. Adorable, right?
