If there’s one snack that I cannot resist it’s crispy treats. Extra marshmallows of course. It’s dangerous to have these things in my house because I do that thing where I lift a corner of the cover and cut a tiny chunk. You know, because I’m just going to have a bite. And then I return to the pan 2 minutes later for just another bite. You see where this is going, right?
At any rate, the nice thing about these is that they are lower in fat than other sugary options. When eaten in moderation, of course. Cooking Light has managed to take it a step further by cutting out a few more calories in these delicious Double-Chocolate Chewy Crispy Bars. They pair up cocoa powder with the crispy mix and a drizzle of chocolate on top for the perfect treat.

- 2 tablespoons butter
- 10 ounce marshmallows
- ¼ cup unsweetened cocoa
- 6 cups rice cereal
- Cooking spray
- 4 ounces bittersweet chocolate, chopped
- Melt the butter and marshmallows over medium-low heat. Stir in the cocoa and cook for 3 minutes.
- Remove from the heat and stir in the cereal, tossing to coat. Pour the mixture into a 13×9 pan coated in cooking spray. Use a buttered spatula to flatten out the treats.
- Melt the bittersweet chocolate in the microwave on medium heat for 45 minutes, stir and return to the microwave if additional melting time is needed. Drizzle the chocolate over the cereal mixture and chill for 10 minutes before slicing and serving.
