- 1 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 3/4 cup sugar
- 3 large egg whites
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup fall sprinkles, plus more for sprinkling
- Assorted Wilton candy melts
Happy Monday folks! I’ve got something really exciting for you today. It’s officially fall, the leaves are changing and Halloween is right around the corner. Today I’m teaming up with Wilton to bring you a great fall project for all of your fall parties. These petite funfetti cakes look beautiful and taste delicious and are sure to be the talk of your fall party. Be sure to keep reading to learn how you can win all of the Wilton supplies that you’ll need to make these cakes! (Giveaway is now closed!)
Preheat the oven to 350°. For the cakes, mix together the flour, baking powder and salt in a medium-size bowl. Combine the butter and sugar in your KitchenAid mixing bowl and blend until fluffy. Add in the vanilla and mix, then add in the egg whites and mix until well blended. Add in the milk and dry mixture in 3 parts, alternating between wet and dry, beginning and ending with the dry ingredients. Once the batter is completely mixed, remove from the stand and stir the sprinkles in by hand.
Prepare the fall cake pan by spraying it evenly with cooking spray. Fill each cake spot 3/4 full of batter. Be sure to not overfill as the batter will rise. Bake for 18-20 minutes, until a tester inserted comes out clean. Place the pan on a cooling rack to cool completely.
Remove the cakes from the pan and place round-side up on a piece of wax paper. I inserted sticks into the cakes but you can omit these if you’d like. Melt each of your desired candy pieces according to the directions and add in 2-3 tablespoons of milk to dilute the mixture. Drizzle the candy evenly over the pieces of cake and then top with sprinkles. Allow these to cool and harden completely before storing.
