Did everyone have a great holiday? I was so happy to have an extra day off of work, some nice weather and time with my family.  I was able to have the best of both worlds with both an Eater brunch and Easter dinner. I’m not a ham person but I definitely love a big helping of mashed potatoes.

I do, however, really enjoy brunch. Even if it’s not just for a holiday. Pancakes, bacon, quiche…bring it on! Today I’m bringing you a recipe that I crafted for the Living Litehouse blog for a tasty quiche. The thing that I love most about quiche is that you can gather any assortment of ingredients, throw them in with the mix and you have a delicious meal. I also presented some tips for preparing an Easter meal. I realize that we are now past the holiday but you can certainly apply these tips to any gathering. After all, Mother’s Day is coming up.
