- 1 diced butternut squash
- 4 cups chicken stock
- 2 Tbsp Gourmet Garden Ginger
- 1 Tbsp Gourmet Garden Garlic
Happy Monday everyone! I’m recovering from another weekend of cooking and baking but I’m very excited to be bringing you a giveaway this week. While I managed to keep a steady flow of herbs coming from my garden this summer, the colder temperatures have set in and it is very difficult to keep fresh herbs. I typically will turn to purchasing them at the grocery story but it can get expensive and I usually end up not being able to use all of the herbs before they go bad.
Gourmet Garden herbs are a great solution for this. You may have already begun to see their herbs pop up at your grocery store by the fresh herb section. These are fresh, organic herbs stored in tubes that you can keep in your refrigerator for up to 3 months. Pretty impressive. I’m also very excited to bring you a giveaway today of a shipment of 12 different herbs from Gourmet Garden! Be sure to read through the entire post to find out how you can win. Now, onto the soup. In a large pot bring the chicken broth to a boil. Add in the squash, reduce the heat and cover, simmering for 20-25 minutes. The squash should be tender. Add in the ginger and garlic and continue to simmer for 5 minutes. Using a stick blender or your actual blend, puree the soup and serve with a bit of cream and sprinkle of chives.
