One of the many things that I love about summer is pasta salad. I love how there are endless possibilities of what you can do with this picnic staple.  I am often inspired by everyday recipes and enjoy turning them into a new creation with a bit of pasta. I also get really excited when I get to choose which pasta shape will fit with what flavors.  It’s the little things. Seriously.

I’ve been on a Greek salad kick lately. I love the combination of feta and Kalamata olives and thought that this would be a great fit for a pasta salad creation. Lightly drizzling the salad with a homemade red wine vinaigrette adds the perfect balance of Greek flavor.

Cook the pasta according to the package instructions. Drain and rinse in cold water once the pasta is cooked.

Meanwhile in a small bowl combine the red wine vinegar, olive oil, garlic, oregano, basil, lemon juice, salt & pepper. Whisk the dressing until the flavors are well incorporated and put them off to the side.

In a large bowl combine the pasta along with tomatoes, Kalamata olives, peperoncini peppers and feta. Lightly drizzle half of the vinaigrette onto the pasta mixture and toss to coat. Drizzle on additional vinaigrette as needed. Sprinkle with salt and pepper to taste and add additional oregano if desired. Keep the pasta salad chilled until you’re ready to serve.

  • ¼ cup Peperoncini peppers, sliced
  • 1 cup grape tomatoes

  • Salt & pepper
