- 2 slices center-cut bacon
- 4 ounces cream cheese, softened
- 4 ounces fat-free cream cheese, softened
- 1/4 cup shredded extra-sharp cheddar cheese
- 1/4 cup minced green onions
- 1 teaspoon fresh lime juice
- 1/4 teaspoon kosher salt
- 1 small garlic clove, minced
- 14 jalapeño peppers, halved lengthwise and seeded
Raise of hands of how many people were looking for a delicious snack while watching football yesterday… Well next time you’re looking for a game-day snack I’m going to highly recommend these stuffed jalapeños. Using a light cream cheese and a lower fat cheddar makes these a healthier option with only 56 calories in 2 halves. That’s pretty impressive for something that tastes so delicious But don’t take my word for it, try them yourself.

I’m a huge fan of their pre-shredded cheese products as they taste especially fresh and like they were just shredded from the block.
Preheat your grill to medium-high heat. Cook the bacon in a skillet until crisp and then remove from the heat to cool and crumble. Combine the bacon, cheeses, onions, lime juice, salt and garlic in a medium bowl and mix well.
Divide the cheese mixture amongst the pepper halves and place them cheese side up on the grill. Cover the grill and allow the peppers to cook for about 20 minutes, until the bottoms of the peppers crack and brown, and the tops begin to brown. Place the peppers on a serving platter and sprinkle them with cilantro.
