Last week I talked about roasting your own garlic for my Roasted Garlic & Olive Focaccia and today I’m going to show you exactly how to do it. This is an extremely easy way to make your own roasted garlic so that you can incorporate this amazing flavor into all of your dishes moving forward. My suggestions for roasted garlic are to mix it into some butter to make your own garlic bread or to spread it on a homemade pizza crust. And trust me, it will keep the vampires away!
Start by slicing the tops off of 5-6 large heads of garlic. You don’t want to cut it down too low but you also want to be sure to expose as many cloves as possible. Place the heads of garlic, cut side up, in the bottom of a baking pan. Drizzle the exposed cloves generously with olive oil and then sprinkle the tops with salt and pepper.
Preheat your oven to 400°. Tightly cover the pan with aluminum foil and bake for 40 minutes. Remove the pan from the oven and allow the garlic to cool for about 10-15 minutes before removing the foil. Allow the garlic to cool for additional time until they are cool enough to handle. One at a time grab the garlic by the base and gently squeeze out the garlic cloves into a bowl. Use the garlic immediately or cover and store for up to 1 week in your refrigerator.
