Roasted red peppers are delicious. They add that perfect amount of unique flavor to any dish. I also really love them on pizza along with goat cheese. You can purchase these in the grocery store where they are typically stored in oil in a jar but you can also easily make these at home!
Start with your fresh, clean red pepper and a grill heated to a medium temperature. Place the red pepper directly on the grill and KEEP THE LID CLOSED as much as possible, turning on occasion. You really want to char the outside but not burn the pepper.
Once the pepper is evenly roasted on all sides, remove it from the grill and wrap it tightly in foil. Set the pepper off to the side for about 30 minutes.
Remove the pepper from the foil and cut the stem out. Slice the pepper down the center and remove any additional seeds along with the skin.
Cut the pepper into strips for use in your recipe or cover and refrigerate until you need it. I’m planning to use my roasted red pepper in tomorrow’s recipe…stay tuned!
