I’m not sure if I’ve mentioned it on the blog recently but I’m moving. Not anywhere far, just across town but the sheer madness involved in any move is enough to crawl in the corner and cry. Okay, maybe not cry but packing and moving is such a daunting task. I’ve been holed up in a small one-bedroom apartment for quite some time. My small kitchen doesn’t allow for much storage and my even smaller living space means that my photography setup is constantly being pulled in and out of storage for use. I’m super excited for our new place because I will get a studio for my work (!!!) and more space than I even know what to do with.
Despite the fact that I don’t even know where to begin packing, I am a little excited to clear out the old stuff in my house and kitchen and make room for some new things. That’s the nice thing, you get to clear out all of the junk that has been piled up over the years even though you probably don’t need it anymore. So with that, I’m looking to clear out some of the old kitchen gadgets and replace them with some shiny new toys.
Core Kitchen recently sent me some very colorful new cutting boards and kitchen gadgets that I’m very excited to use. My cutting boards were looking pretty ugly from all the wear and tear. I love that these cutting boards have grips on the bottom to keep from sliding while chopping. I’m also a huge fan of the new spatulas they sent. You can never have enough!

- 1 tablespoon cider vinegar
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- ¼ teaspoon sugar
- ¼ teaspoon pepper
- ⅛ teaspoon salt
- 6 cups chopped stemmed Lacinato kale
- 1 small sweet apple, thinly sliced
- 1 ounce shredded extra-sharp white cheddar cheese
- Combine vinegar, olive oil, Dijon mustard, sugar, pepper, and salt in a large bowl, stirring with a whisk.
- Add kale and apple; toss.
- Top with white cheddar cheese.
