Alright! I can’t believe that it’s Thursday already! I’m day 4 into my healthier lifestyle goal and things have been going pretty well. My biggest draw is always to sweets so I’ve been trying to find ways to occupy this craving. These lemon bars a delicious and lower fat/calorie way to be a little naughty when you’re on a healthy-eating kick.

Lemon is something that I love to hate. It’s so tart and yet when you mix it into a dessert it becomes absolutely irresistible to me.  I literally could have eaten the entire pan of these!  But before I get into this I just wanted to remind you that my Lean Cuisine Salad Additions giveaway is still going on! 5 lucky readers will receive a prize pack this week with your chance to try their new flavors! Preheat the oven to 350°.  Lightly spoon 1 1/2 cups of flour into dry measuring cups and level with a knife.  Combine the flour and powdered sugar in a medium bowl and stir with a whisk.  Work in the butter with your fingers or a pastry cutter until the mixture comes together like a dough when pinched.  Press the mixture into the bottom of a greased 13×9 pan and then bake for 15 minutes. Cool the crust for 5 minutes on a wire rack.

For the lemony filling combine the sugar, 1 1/2 tablespoons flour and lemon rind in a medium bowl and stir with a whisk.  Add in the lemon juice and eggs. You’ll definitely want to use fresh squeezed lemon juice here! Pour the mixture over the crust and bake for 20-25 minutes, until the lemon filling is set.

Cool the bars completely before sifting 2 tablespoons of powdered sugar of the top and slicing them into 24 equal bars. And go ahead and enjoy because each bar is only 156 calories!
