Happy Taco Tuesday everyone! It is by far my favorite day of the week. Next to Friday, and Saturday…and Sunday. I held a little fiesta at my house over the weekend and enjoyed some fancy, gourmet tacos, homemade salsa and guacamole so you’d think I’d be taco’d out by now. But I’m not. I’m going to mix things up today with some nachos! I’m totally obsessed with grilled corn lately so I decided to make Mexican Street Corn Nachos!

If you haven’t tried Mexican street corn then you’re missing out! It is such a wonderful world of flavors and I decided that grilling my fresh ears of corn and sprinkling it over some tortilla chips and melty cheese would be the perfect way to get my fill. My favorite way to strip corn from the cob is with my OXO Corn Stripper. It seriously is the one tool you need in your kitchen.
