- 4 cups water
- 2 cups coarsely chopped peaches
- 3/4 cup sugar
- 1/2 cup fresh raspberries
- 1 cup fresh lemon juice
- 4 cups ice
- 16 oz seltzer water
I know that I have readers from all over the nation so I’m sure many people can sympathize with my disgust over the weather we’ve been having. Whether you live on the east or west coast, or in the midwest like myself, I know you’re feeling the same way over the lack of heat and excessive rain. I thought maybe I would ‘summer-up’ my weekend by making a refreshing drink with juicy peaches and raspberries. The only thing missing is a tiny umbrella.
Combine the water, peaches and sugar in a saucepan over medium heat. Bring the mixture to a boil and then reduce the heat to low and simmer for 3 minutes.
Pour the mixture into your blender and allow it to sit uncovered for 20 minutes to cool slightly. Add in the raspberries Secure the lid onto your blender and puree until smooth. Place the mixture into the refrigerator for 3 hours.
Pour the mixture through cheesecloth into a large picture. Stir in the lemon juice. Divide the mixture amongst 12 glasses filled with ice and top off the glass with a splash of seltzer water. Garnish the spritzer with peach wedges, raspberries and mint leaves and enjoy on a sunny day!
