- 5.6 oz all-purpose flour (about 1 1/4 cups)
- 1 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup creamy peanut butter
- 1/4 cup butter, melted and cooled slightly
- 2 tblsp 2% reduced-fat milk
- 1 tblsp vanilla extract
- 2 large eggs, lightly beaten
- 1/4 cup semisweet chocolate chips
- Cooking spray
- 4 (0.75-ounce) peanut butter cups, coarsely chopped
I have been trying so hard to curb my unhealthy eating but I just can’t seem to shake this sweet tooth! Between this blog and my office, I’m surrounded by sweets pretty much on a daily basis. While I will never say a combination of peanut butter cups and sugar are healthy, these certainly are lower in calories than most baked goods. Besides, I really think that blondies are the new brownie anyway.

Preheat your oven to 350°. Weigh or lightly spoon the flour into measuring cups, level with a knife and place in a medium bowl. Add in the sugar, baking powder and salt and whisk together well. In a separate bowl, combine the peanut butter, eggs, butter, milk and vanilla. Stir the peanut butter mixture into the flour mixture and mix well. Stir in the chocolate chips.
Pour the batter into a 9 inch square metal baking pan that has been lightly coated with cooking spray. Evenly sprinkle the peanut butter cups over the top and lightly press them into the batter. Bake for 19 minutes, until a toothpick inserted into the center comes out clean. Remove the blondies from the oven and cool on a cooling rack completely before serving. The best part…only 153 calories per serving!
