• 16 oz pasta
  • 8 oz Jennie-O Italian Seasoned Ground Turkey
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 2 tblsp fresh basil
  • 2 tblsp fresh parsley
  • 3 tblsp tomato paste
  • 14.5 oz can fire roasted tomatoes w/ garlic
  • Parmesan cheese

Here we are on another lovely Friday. Remember all of that complaining I’ve been doing about wanting summer to show up? Well, it’s here. In full force. It has been in the upper 90s for about the last week, humid, disgusting. I’ve been jumping from work to the gym and then home to sleep only to wake up and do it all over again. The heat is exhausting! And so is my schedule…Insert quick and easy meals.

I’m always looking for ‘one-pot wonders’ and ’20 minute dinners’ to get me through my busy weeks which is why I love this dish. Not to mention it is super low in calories because I used Jennie-O Lean Italian Seasoned Ground Turkey. It’s super low in fat and offers a great base of flavor to this dish. Oh, and there’s a Jennie-O giveaway today if you read all the way through this post!

Cook the pasta according to the package instructions.

Meanwhile, in a large skillet brown the turkey along with the onion and garlic. You most likely won’t need to drain anything off of the meat which is why I love it. Add in the tomatoes, tomato pasta, fresh parsley and fresh basil and bring to a simmer. Reduce the heat to low and continue to simmer the ragù for 10 minutes.

Divide the pasta evenly amongst 4 bowls and top with 1/2 cup of sauce. Sprinkle with additional fresh basil and parsley to serve and freshly grated Parmesan. There’s your 20 minute meal!
