- 16 tsp lemon curd
- 1 package pie crust (top & bottom)
- 16 lollipop sticks
- Powdered sugar
When life gives you lemons, you make lemonade. When life gives you a tiny jar of lemon curd, you make pie (pops). I’ve had an obsession lately with Trader Joe’s. I probably go in there weekly just to look around and find fun foods that I wouldn’t normally find at my regular grocery store. On a recent trip I picked up a cute little jar of lemon curd. Yes, I know you can make lemon curd homemade but I really just wanted to try it out. And it was fairly inexpensive. So today’s post features a super quick and easy snack/dessert that you can whip up if you need to prepare something for an upcoming cookout or party. And we all know how much everyone loves miniature desserts.
Allow the pie crust to sit at room temperature for about 10 minutes before rolling it out onto your cutting surface. Using a 2-3″ round cookie cutter, carefully cut out circles of pie crust, making sure to use as much of the crust as possible.
Lay the circles out on your work surface and on half of the circles spoon a small teaspoon of lemon curd into the center. Place one of the candy sticks into the center of the lemon curd. I ran my wet finger around the edge of the pie crust before placing a second crust circle on top. Make sure that the crust is pinched tightly or the lemon curd will seep out.
Using a fork, pinch the crust around the entire outer edge of the pie pop. Place the pops on a baking sheet and poke 4 small holes into the top of each pop. Bake for 15-20 minutes at 350°.
Remove the pie pops from the oven and allow them to cool completely before dusting with powdered sugar.
