• 1 garlic clove, crushed
  • 1/2 small onion coarsely chopped
  • 1 jalapeno, stem removed
  • 1 lime, juice of
  • 1 handful of fresh cilantro
  • 1 (14.5oz) can Hunt's Diced Tomatoes
  • 1 (10 oz) can Rotel Original tomatoes
  • 1/2 tsp salt
  • 1/4 tsp cumin

So I bet you thought that I was stopping at the smoothie with my blender….not so. Blendtec claims to be able to blend many things. iPhones, skeletons, Justin Bieber. But no, I didn’t try any of those things. I’m sticking to edible items. One of my biggest complaints with salsa is that it usually has chunky tomatoes. I LOVE tomatoes raw but am not a big fan of cooked tomatoes. So today I’m making my own restaurant-style salsa, minus the chunky tomatoes!

This is so easy…Combine both cans of tomatoes along with the onion, jalapeno, garlic, lime juice, a handful of fresh cilantro, salt and cumin in the pitcher of your blender. (Hopefully in your new Blendtec Blender) Pulse 5-6 times depending on how chunky you want your salsa to be. I prefer it smooth so I nearly pureed mine. Pour your salsa into a bowl and serve with your favorite tortilla chips. DONE! If you prefer a milder salsa you can go easy on the jalapeno seeds.
