• 2 cups Simply Potatoes mashed potatoes
  • 1 stick plus 2 tblsp butter
  • 8 slices bacon
  • 4 eggs plus 4 egg yolks
  • 1 tsp lemon pepper

I really appreciate a good, elaborate recipe now and again but sometimes doesn’t it seem like you spend more money on ingredients than you would if you had just gone out to dinner? I absolutely love a good, home cooked meal but I also really appreciate someone waiting on me and cleaning up the mess as well! Unfortunately I don’t have a person chef and can’t afford to eat out all of the time. Because of this I try and find recipes that use as few ingredients as possible.

I originally created this recipe for a Food.com contest that featured Simply Potatoes. The task was to create a recipe using one of the Simply Potatoes products and only 4 other ingredients. This definitely required some craftiness! Salt, pepper, oil…those all counted as one of your ingredients so you can imagine that the task got even taskier!

Start by melting 1 tablespoon of butter in a large skillet. Form the mashed potatoes into 4 patties and place into the pan. Cook each side of the potato patty for around 5-6 minutes, until the outside is crispy.

While your potatoes are cooking, cook the bacon according the package instructions. I like to microwave my bacon for quick and easy cleanup for around 4 minutes. In a separate pan, melt 1 tablespoon of butter and crack each of the eggs and cook them sunny-side up. I used a round cookie cutter to keep them in a circle shape.

Potatoes, check. Bacon, check. Eggs, check. Now for the sauce. Vigorously whisk the 4 egg yolks in a medium stainless steel bowl along with 1 teaspoon of lemon pepper. Place the bowl over a saucepan of barely simmering water and continue to whisk rapidly. Slowly drizzle in the melted stick of butter until the sauce thickens. Remove from the heat.

Let’s plate this delicious breakfast! Start by laying one potato patty on a plate. Add on 2 slices of bacon and one egg. Drizzle with the hollandaise sauce and sprinkle with additional lemon pepper to serve. And there you have it!
