I got a new toy. A new kitchen toy. I’ve been wanting a kitchen torch for quite some time now and against my boyfriend’s wishes I finally purchased one. Something about me and a torch and fire…I dunno. At any rate, I’ve had it for a while and have been wanting to use it on a recipe. I’ve also been wanting to craft a s’mores dish and after I realized that everyone has created a s’mores ice cream it was back to the drawing board. And then my idea for s’mores mousse was formed. Two things I love: s’mores and mousse. And graham cracker crusts. I realize that’s three things. But I’m telling you this is delicious and a great dessert to serve or craft for a picnic.

Let’s start with the crust. Place the graham cracker crumbs in a small bowl and mix in the sugar. Drizzle the melted butter evenly over the tops and using a fork, gently stir the crumbs until they are well moistened. Divide the crumbs evenly between the 4 serving cups and press firmly into the bottoms.

Melt the chocolate in the microwave using a low-setting, stirring after every 20 seconds. Be careful not to burn your chocolate. Once the chocolate is completely melted, drizzle it evenly over the tops of the 4 crusts.

Onto the mousse. Place the marshmallows in a medium bowl and place in the microwave for 45 seconds. They will puff up to four times their normal size but instantly fall once you stir them. Add in 1 tablespoon of heavy cream and mix well. Place the bowl to the side to cool.

Pour the remaining heavy cream into a separate bowl and using an electric mixer begin to beat the cream until soft peaks form. Gently fold the whipped cream into the marshmallow and then divide the cream amongst the four cups.

Top each mousse cup with a sprinkle of graham crackers and additional chocolate squares. This is where my torch comes in! I topped each cup with a handful of miniature marshmallows and used my torch to gently toast the marshmallows for a real campfire feel. Yum!
