Spring is finally here and next to asparagus I think that spring peas are my favorite vegetable. I honestly will sit with a bag of fresh peas and eat them like candy. They sell shelled spring peas at Trader Joe’s if you’re interested. I’m also a huge fan of the traditional Spring Pea Salad made with cubes of cheddar, mayonnaise and bacon. How could you go wrong?

I decided to switch things up a bit with the classic pea salad and substituted some of the mayonnaise with Litehouse Homestyle Ranch dressing. I think that it adds an extra boost of flavor to the pea salad. I also love that you can plop a spoonful of this salad onto a regular lettuce salad and really complete the meal. And then you don’t even have to add any more dressing!

If you’re serving this as a side dish I would recommend making it the night before so that the flavors infuse into the peas.If you’re using fresh peas you’ll want to blanche them first. You can also used frozen peas that have been thawed.
