- 6 1/2 cups halved hulled strawberries (about 2 pounds)
- 6 tblsp fresh blood orange juice or orange juice
- 3 tblsp sugar
- 2 tsp grated blood orange peel
Today is part 1 of a 2 part post. Have you ever tried a blood orange? I had not until this past weekend. The vibrant color of the fruit has always attracted my attention but I’ve never found or tasted one! However, we are in the midst of blood orange season so this is the perfect time to make this delicious compote AND tomorrow make a pound cake to dress with the fruit. And don’t forget the homemade whipped cream because that’s what is really going to make this dessert. But we’ll get to all of that tomorrow. For today, let’s make compote.
Place the berries in a large bowl. Add in the orange juice, orange peel and sugar and gently toss to coat. Let this sit for at least an hour for the sugar to work its magic and then cover until you’re ready to serve it.
