- 3 tablespoons brown sugar
- 2 teaspoons chopped fresh thyme, divided
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup pecans
- 1/2 cup blanched almonds
- 1 1/2 tablespoons butter
- 3 cups tiny unsalted pretzels
- 1 cup crispy rice cereal squares
- 2 tablespoons maple syrup
The new year is upon us! Today I’ve got a quick (and light) post for your New Year’s Even party! This party mix is lighter on the calories and offers a delicious sweet and salty combination. I’m taking this recipe from Cooking Light and it offers up only 142 calories in a 1/3 cup serving. Enjoy and have a great new year!!
Preheat the oven to 350°. In a small bowl, combine the brown sugar, 1 teaspoon of thyme salt and cinnamon. If you want to create a sweet and spicy mix, add in 1/2 teaspoon of ground red pepper.
Place the pecans and almonds on a baking sheet. Bake in the oven for 10 minutes or until the nuts begin to brown. Place the nut mixture and the butter in a medium bowl and mix until the butter has melted. Slowly stir in the pretzels, syrup and cereal and toss to coat. Slowly stir in the brown sugar mixture, tossing the pretzels and nuts to evenly coat.
Spread the pretzel mixture evenly onto a baking sheet and bake for 10 minutes. Stir the mixture once during the baking. Sprinkle with the remaining thyme and allow to cool before serving. Enjoy!
