- 1/4 cup olive oil
- Juice from 1 lime
- 2 tblsp honey
- 1-2 tblsp Sriracha
- 1 tblsp chopped garlic
- 1 tsp salt
- 2 4oz chicken breasts
Today there is a snowstorm expected in Milwaukee and I could not be any more excited for spring to arrive. I’m tired of the boots and wet shoes. On the bright side, the blustery winter hasn’t kept me from grilling out! Sometimes I wish that I had a grill on my desk at work because I honestly would eat a grilled chicken breast every day for lunch. And do not even suggest I just grill it and heat it up later because it just isn’t the same.
My favorite thing on the grill is chicken kebobs. I like the idea of bite-sized chicken pieces mixed with grilled vegetables. I always worry with wooden kebob skewers that I’ve going to ingest little bits of wood shavings. I also hate how hard it is to pull off the meat that I cooked on them. So you can imagine my excitement when I spotted these GrillCombs from Fusion Brands. They also double up as a hair comb. Okay, not really but they are pretty awesome. I used them this weekend to grill up some delicious chicken featuring Sriracha, which is my other current obsession. Be sure to read all the way through today’s post for a fun giveaway! Start by dicing the chicken into large cubes. In a medium bowl, combine the olive oil, lime juice, honey, Sriracha, garlic and salt. For the lime juice I used another snazzy tool from Fusion Brands called the CitrusPod. This thing makes it easy to squeeze the juices from the citrus fruit and catches the seeds before they make it into your recipe. The bottom of the pod also doubles up as a cutting board (great for your summer mojitos) AND the entire thing triples up as a storage container for your lemons and limes. Pretty cool, right?
Okay, back to the kebobs. Place the chicken into the bowl of marinade and allow it to sit at room temperature for 1 hour. Remove the chicken from the bowl and discard the marinade. Thread the chicken onto the GrillCombs or your kebob skewers and place on a preheated grill. Since these are small pieces of chicken it won’t take more than 4-5 minutes per side to cook. Remove the chicken from the skewer and serve with a side of rice. Enjoy!

These look amazing! My favorite type is grilled vegetables. In the summer I love loading kabobs with squash, onions, eggplant, peppers, broccoli, and cauliflower!
