- 2 cups old fashioned oats
- 1/2 cup unsweetened coconut
- 1/2 cup raw pumpkin seeds
- 1/2 cup slivered almonds
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cardamom
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1/4 cup canola oil
- 1 teaspoon vanilla

This morning on the show I will be preparing my delicious Chobani Greek Yogurt Parfait made with homemade granola. Here’s how to make the granola.
Preheat the oven to 300° and prepare a baking sheet with parchment paper.
In a medium bowl, combine the oats, pumpkin seeds, almonds, coconut, cinnamon and cardamom. In a medium saucepan, melt together the oil, butter and brown sugar until it begins to bubble. Remove from the heat and add in the vanilla. Pour the mixture over the dry ingredients and toss them to coat. Pour the granola onto the prepared baking sheet and place in the oven for 25-30 minutes or until grolden brown. Remove from the oven and allow to cool before storing in an air-tight container for up to 2 weeks. You can add dried fruit after the granola has baked if you’d like.
