  • 2 tblsp Tribe Hummus, any flavor
  • 1 cup fresh spinach
  • 1/2 cup shredded carrots
  • 1/2 cup thinly sliced red pepper
  • 1/2 cup thinly spiced cucumber

Today starts week #2 of my healthy eating and calorie counting diet. I’ve got 7 weeks left until I leave for Italy and would like to lose a few pounds before I put them all back on by eating pasta and drinking wine every day. It’s a rough life but somebody has got to do it. I’ve been searching for fresh lunch options that are low in calories and offer a burst of fresh vegetables.

This wrap was inspired by one that I usually get at a local cafe. It includes a helping of hummus which is great for protein and a helping of vegetables. You can play around with the hummus flavor and the vegetables you use but I used Spicy Red Pepper from Tribe. I love that it’s all natural and offers a little kick to my wrap. This recipe is super simple. Tortillas come in all varieties these days but I used a low carb, low fat, whole wheat version that was 10″ in diameter. Spread the hummus around in the middle of the tortilla. Lay the peppers, carrots and cucumbers across the center of the tortilla and top with a healthy helping of fresh spinach. Fold the tortilla over the vegetables and tuck the sides in before you finish wrapping it up. Feel free to play around with the flavors of this wrap by adding additional vegetables such as sprouts, onion, kale or tomatoes.
