One-Pan Chicken Parmesan and Roasted Vegetables

  • 1 package McCormick┬« ONE Chicken Parmesan Sheet Pan seasoning
  • 4 4 oz. chicken breasts, pounded thin
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella or sliced fresh mozzarella
  • 2 cups cubed eggplant
  • 1 cup sliced and halved zucchini
  • 1 cup sliced and halved yellow squash
  • 1 cup red pepper cubes
  • 3 tablespoons olive oil
  • Salt and pepper
  • Cooking spray
  1. Preheat oven to 425┬░ F and spray baking sheet with cooking spray. Empty seasoning mix into shallow dish and discard any remaining seasoning. Press one side of each chicken breast into the seasoning and then place chicken on to the baking sheet.
  2. Place the vegetables into a large bowl and drizzle with olive oil. Season with salt and pepper and then toss to coat. Place the vegetables around the chicken on the baking sheet.
  3. Bake the chicken for 10 minutes and then remove from the oven and divide the marinara sauce and mozzarella between the 4 patties.
  4. Return the chicken to the oven and bake for an additional 10 minutes. Serve immediately.
