Greek Pasta Salad

  • 1 lb pasta (any shape)
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 tsp oregano
  • 1 tsp basil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 cup Kalamata olives, halved
  • ¼ cup Peperoncini peppers, sliced
  • 1 cup grape tomatoes
  • ½ cup feta, crumbled
  • Salt & pepper
  1. Cook the pasta according to the package instructions. Drain and rinse in cold water once the pasta is cooked.
  2. Meanwhile in a small bowl combine the red wine vinegar, olive oil, garlic, oregano, basil, lemon juice, salt & pepper. Whisk the dressing until the flavors are well incorporated and put them off to the side.
  3. In a large bowl combine the pasta along with tomatoes, Kalamata olives, peperoncini peppers and feta. Lightly drizzle half of the vinaigrette onto the pasta mixture and toss to coat. Drizzle on additional vinaigrette as needed. Sprinkle with salt and pepper to taste and add additional oregano if desired. Keep the pasta salad chilled until you’re ready to serve.
